When we did the ride I was able to raise a lot of money easily. But it didn't seem to be well organized and wasn't very big or got a lot of press, which I assume is why it didn't raise enough to continue. I think if there was a better run ride it would attract more. Though WWP is instead starting 5ks and if there's one here, I'm not sure about competing for the same dollars...
My fiance specializes in representing vets (she's an attorney) and there are a ton of disabled vets (and people in general) that have no help as they age. It is really awful. She may have some input for you or be interested. I will pm you her details.

You could def raise money for an existing organization. There are tons of them with wonderful missions including like someone mentioned raising money for veterans. Wounded warrior apparently isn't happening in in the region but you can ride alone or join one in another region to help support them.
This weekend alone you could ride your bike and help these important organizations:
Christian Education for covenant children
The League of Illinois Bicyclists, Active Transportation Alliance, ...

Would love to see the Chainlink start an annual ride & fund for disabled veterans! The Wounded Warriors Project dropped the Soldiers Ride from the Chicago area this year. Very poor turnout last year.
