A co-worker just asked me where she can take a class on how to fix a flat. She lives in Lincoln Park and would ideally like to find one around there.
I did tell her about West Town and Recyclery.

That's cool and not surprising Roscoe Village just let you watch the mechanics like that.

I saw the young mechanic at Performance Bicycle do a workshop last week. Your co-worker could probably call them to see if they have anything scheduled or if they could put something together. I got a flat in Roscoe Village before I knew how to fix the flat myself. I had an extra tube, and Roscoe Village Bikes let me back in the mechanics' den to watch how they fix it. Perhaps a bike shop in the Lincoln Park area would be kind enough to walk her through the process during non-peak business hours. The Cycle Smithy (Clark and Fullerton) guys are pretty nice, and that place isn't very busy during the week.
REI Lincoln Park periodically has a one-hour bike maintenance class that covers fixing a flat, lubing the chain, etc.
Check this page for a schedule. This week, it looks like there's one tonight and another on Thursday.
I had no idea there was so much pent-up "learn how to fix a flat" demand out there. I always have a pump, a tube, tire irons and a patch kit with me, (as well as additional basic tools). If you see me at an event, please feel free to ask me to show you how to fix a flat. I will cheerfully oblige.
