Tom's Meatless Spaghetti Sauce:
Makes 4 servings

1 small onion, chopped
4 cloves garlic, chopped
* small handful, chopped parsley
1 (28-ounce) can crushed tomatoes
1 (8-ounce) can tomato sauce
1 cup water

Saute in olive oil the onion, garlic and parsley until transparent. Add crushed tomatoes. Simmer 1/2 hour. Add paste and 1cup water. Simmer 1/2 hour. Add salt and pepper to taste. Makes 2 1/2quarts, enough for 2 pounds linguine.

Variations: Add 1 (28-ounce)can strained whole tomatoes and /or 1/4 teaspoon crushed red pepper and some basil at the very end. Around 95 calories per serving.

My morning vegan smoothie

1 cup blueberries

1 banana

1 apple (optional)

8-10 baby carrots

1 cup spinach

1 cup unsweetened chocolate almond milk

Blend together. After initial ingredients blended, add:

peanut butter to taste (~1 teaspoon - ~1 tablespoon)

1 cup of ice

Finish blending. Serves 2.

Sophie's Basic Sloppy Joes :

2 Pounds lean ground beef
1 Large onion minced
2 Teaspoons salt
1/4 Teaspoon black pepper
1/4 Cup flour
2 Cups water
1 Teaspoon Worcestershire sauce
1 1/2 Cups Ketchup
1 1/2 Teaspoons Chili powder

Brown ground beef in large skillet. Drain any fat. Add onion and cook for 5 minutes longer.

Add salt, pepper, and flour and stir over medium heat 2 - 4 minutes longer.

Add water, Worcestershire sauce, Ketchup and Chili powder. Stir, then simmer 20 minutes. Makes 6 - 8 servings.
