Does anyone in Chicago perform these retrofits, a la Bilenky Cycle Works in Philly?  I'd be grateful for a recommendation or two.  If I can keep my money - and my bike - in Chicago, then so much the better.

I do frame building/repair in Chicago, but currently do not offer S&S retrofits. I don't know of anyone who currently does in the city. I'm interested in doing it at some point, but have too many things going to add another currently.
If I hear of someone who does it, or get around to doing it myself I'll keep you updated.
Bilenky are great, I would not hesitate in recommending them, but there are probably some closer folks for that as well. Waterford perhaps?

I have been trying to find a place to do this as well.  The link below lists frame builders who will retrofit your existing frame with S&S Couplers.

Try waterford/ Gunnar in Wisconsin.  Not sure if they do retro-fits though.

Ditto what Owen said. But I'd add that most pro shops have relationships with builders who do S&S. It's not entirely in house, but you can generally handle the drop off and pick up locally and pay the same amount as if you'd sent the frame away for retrofit. Bilenky, for example, works with a number of local shops in this way, effectively offering outsourced coupling services at wholesale.

It's a shame those couplers aren't a lot more common.  If a high percentage of junked bikes had them imagine the creations the rat patrol might make.
