Mitch, check out Amlings (Milwaukee & Oakton - Niles) or Al's Bike Shop (Lincoln - Downtown Skokie). Both really nice and friendly.
Glenview Cyclery in Downtown Glenview across from the new library. Nice guys in there.

I live in Edgewater, and the closest one to me is Johnny Sprockets in Andersonville on Clark staffed with great people to work on you bike! But they're closed on Tuesdays and seems like they're always busy, so a lot of bigger work may not be in-and-out in one day. Plan your trip accordingly.
Because I seem to always find my problems on Friday evenings or weekends, and favorite time of the week is to go to bike shops on Monday afternoons, I go to Turin in Lincoln Sq/Uptown - on my commute home with a slight detour. Awesome mechanics there as well. They're still open later as of now, and are open 7 days a week.
I also think they are more approachable if you build a relationship with them.
Nothing too fancy. I got a couple Surly's and just bought a cross bike for road stuff. Got a few gucci parts here and there, but my rides are pretty blue collar...
Ended up taking my long haul to johnny sprockets in Andersonville. Seem like really good guys in there. Gave me a completely honest assessment of what I needed, and what I didn't.
