Does anyone know where I would be able to find statistics on bicycle accidents and injuries in chicago? I can't seem to find anything online and it seems like something that would be public record.

No, and I've looked as well. Let us know if you find a source. The "best" I've found is IDOT statistics and they typically trail by two years or so. Howard (H3) may have a resource for you.
I would think that any data you do find would be wildly inaccurate, because so many people don't report accidents and injuries.
Active Transportation Alliance does a lot of work on crash reduction and has reports available on their website:
