So thanks to follow-up work on Kevin's part we've learned that both of the referenced incidents in the night to Thursday involved sign poles mounted in grass, rather than sunken in any significant amount of concrete. In both cases it's apparent or likely that they weren't mounted very well in the ground.
I had visions of someone driving around with a truck and pulling the signs out of the ground with a winch. We'll chalk this up to coincidence.

I had put on a related note: but deleted it before posting.
The point being any where you "lock" your bike if a thief wants it they will take it.
As fa as post being in concrete, they probably are but a weed whip, mower combined with road salt, a "bump" from a car or just years of wind moving the sign may make it vulnerable.
To summarize lock,lock and lock. Then take the seat off.
