After my 40 mile ride yesterday, I noticed (and have noticed after a few rides) that my hip joint (?) on my right side is sore... is this a seat adjustment fix or a need-to-stretch-more fix? Is my seat too low?

it could be possibly you're seat is too high. you might be overextending on the bottom of the stroke.
I agree with the too high estimate. However, since it occurs on just one side, and very few people have legs the same length, I will venture your right leg is slightly shorter than your left. You might want to get a Dr. Scholls (sp) insert and put in your right shoe. Or you can get you MD refer you to a specialist to measure your legs.
It also might be the fact that you are mashing rather than spinning your pedals. But I think seat height is much more likely to be the common cause, either lower your seat or get shorter cranks depending on how your bike fits you.

So knee soreness is seat too low, hip soreness is seat too high?
Thank you... I'm hoping it's just a stretching issue, but I should probably get a proper bike fit regardless. I do appreciate your advice!

Are you riding fixed? Mine only gets noticeable when I ride fixed (as I rode ragbrai last week with no issues on my real road bike). Try stretching your hip before and after a ride, 30 sec x 3, ice, massage and a foam roller on the IT band (I highly recommend a foam roller in general).

I've also read (on cyclingnews.com) that low fiber diet can be a common issue with specifically right hip cycling issues - I'll try to find the article but I'm at work.

I'd also recommend seeing a chiropractor.

A friend of mine also recommended Turin (Evanston) or Shifting Gears (Irving Pk. west of the Kennedy).
